Iberostar Group, which in 2020 committed to a zero-waste objective through its 2030 Agenda, said it plans to capitalize on artificial intelligence at its 100-plus properties to minimize waste and save up to 1,600 tons of food in the first year through the implementation of Winnow technology in its hotel kitchens.
The announcement was made in conjunction with the United Nations International Day of Awareness of Food Loss and Waste.

“This commitment by the company will become a reality thanks to an innovative system, based on technology from the Winnow company, which will contribute to ending food waste and bringing the company closer to the goal of being free of waste sent to landfill by 2025,” Iberostar Group said.
The system, which tracks what Iberostar kitchens throw away and save, has been piloted in the company’s hotels in Europe, the Caribbean and Latin America, and will now be implemented property-wide.
“Reducing food waste is key to meeting our 2030 Agenda goals,” said Iberostar Group Vice-Chairman & CEO Sabina Fluxa. “In addition to training our employees to address food waste, we have put in place this innovative system to reduce the amount of waste we produce without affecting the guest experience.”
In the first year of the Winnow system’s implementation, Iberostar’s goal is to reduce its waste by 50 percent.
All told, Iberostar said it will save around 5 million meals per year, which translates to 1,800 pounds of food. What’s more, it will no longer emit nearly 8,000 tons of carbon dioxide a year.
Through its 2030 Agenda, Iberostar expects to be carbon neutral by 2030.
